A santoku is a Japanese all-purpose kitchen knife. Like a chef's knife, the santoku is used for just about every cutting job in the kitchen. The name means “three virtues" and may refer to the three types of foods it works well with—vegetables, proteins, and fruit. This santoku also features hollow-ground indentations on the blade to help reduce friction so the blade glides through the food more easily. When we first introduced the Shun Classic Hollow Ground Santoku to the market, it was named “Kitchen Knife of the Year" by BLADE MAGAZINE.

The Shun Premier 7-in. Santoku is a beautiful, Asian-inspired chef's knife that many cooks today have added to their kitchen favorites. This in-between weight and size make it perfect for medium-sized kitchen tasks, from slicing carrots and shallots to mincing herbs to cutting chocolate or butter. Cooks with smaller hands or those who simply prefer a smaller, lighter knife may find that this smaller santoku becomes a top go-to knife. Some cooks have told us they use it in place of a paring knife for some tasks or love it for cutting up fruit for breakfast.

The Meridian Elité Kullenschliff Santoku Knife is a Japanese chef's knife with the same versatility found in a traditional chef's knife. It has a thin taper for maximum precision when slicing vegetables, fish and meat. The kullens (semi-circular hollows on either side of the blade) reduce drag and ease the cutting and separation of meats, cheese and vegetables. The blade and handle are compatible in width and weight, resulting in a well-balanced knife.

The German 1.4116 stainless carbon alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge.
This knife line is one-piece, hot-drop hammer forged, which produces the strongest blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 57-58.
