I came here as I needed a cooking pot that would be well suited for preparing Mussels Meuniere. When I walked in I was warmly greeted and when I mentioned what I had in mind he knew exactly what I was talking about and showed me several good options, one of which I selected. It turns out he happened to also be a skilled chef with a complete knowledge of cookware along with its preference according to use, which makes cookware shopping so much easier.

This whetstone comes mounted on a wooden holder and with a nagura (buffer stone)
Use this fine grit stone after sharpening with a coarse and medium grit to remove any scratches on the surface or to simply realign a slightly dull edge for a razor sharp finish. Using a fine grit stone to polish your edge can actually help to make carbon steel knives more rust proof. Start with a generous amount of water over the stone and finish by pressing your blade lightly in the slurry. The particles in the slurry act as a buffer to polish your blade. The nagura or buffer stone that is included with this stone will also help you create a slurry that aids with sharpening and polishing.
