ClassicAfter a chef's knife and a paring knife, some cooks say that the knife they most can't live without is their bread knife. It's a crime to ruin a fresh loaf of bread by smashing it beneath the blade of a dull knife. The wide, “low frequency" serrations on the Shun Classic Bread Knife are not only razor-sharp, but they do a much better job slicing any type of bread than a straight-edged knife. The undulating serrations provide the power you need to gently saw through a crusty loaf without tearing the tender interior. And it works equally well on very soft breads and even pastries.
Slice tender or crusty breads with no ripping, squashing, or tearing
Proprietary VG-MAX cutting core is wear and corrosion resistant, strong, and very fine-grained to enable a razor-sharp, long-lasting, single-bevel 16° edge
34 layers of stainless Damascus cladding each side (68 total); support the core, add stain resistance, and help food release from the blade
D-shaped ebony-finished Pakkawood handles are comfortable for both left- and right-handed users; durable, beautiful, and won't harbor bacteria
Full composite tang for light weight and perfect balance
Handcrafted in Japan

Have you ever found yourself hovering over the edge of the cutting board so that you don't knock your knuckles on the board as you reach the bottom of the stroke? The Shun Offset Bread Knife solves the problem. The offset handle position creates additional knuckle clearance and perfectly positions your hand for a more powerful—and thus, easier—cut. The scalloped serrations will slice neatly into your loaf without skidding; no matter how crusty it is.

If you bake or buy whole loaves of bread, a bread knife will be one of the most-used knives in your kitchen. Whether you love wonderfully crusty or delicately tender bread, the Shun Premier Bread Knife will be your loaf's new best friend, no matter what its texture. The key is Shun's razor-sharp, wide, “low frequency” serrations. Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing. Unlike sawtooth serrations that are spaced closer together, the Shun Premier Bread Knife's wide serrations will gently glide through the bread without tearing. This keeps the bread's texture intact and enhances eating pleasure. Cakes and pastries also benefit from the Shun Premier Bread Knife's smooth cutting capabilities.
Whether your bread it crusty or tender, this knife cuts without tearing or crushing—and looks beautiful doing it
VG-MAX cutting core; the latest in the VG line of “super steels”; wear resistant, corrosion resistant, holds a fine, sharp edge; 16° each side
68 micro layers of Damascus cladding look beautiful, support and protect the core
Hammered TSUCHIME finish helps release food easily when cutting
Walnut finish, contoured Pakkawood handle; offers comfort and control; resists moisture

The scalloped edge of the Messermeister Meridian Elité 9” Bread Knife will bite into the crust of bread with certainty. The serrations on this knife produce smooth, clean cuts with fewer crumbs and minimal compression. This knife slices flawlessly through soft-skinned fruits and vegetables as well, however it is not recommended for cutting proteins.
FEATURES
The German 1.4116 stainless carbon alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge.
This knife line is one-piece, hot-drop hammer forged, which produces the strongest blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 57-58.
The three-step, 15° Elité edge is hand stropped on a cloth wheel, creating the sharpest possible cutting surface on an edged tool.
The bolsterless heel simplifies all cutting, sharpening and honing tasks, making use of the entire blade from heel to tip.
Handcrafted in the historic cutlery capital of Solingen, Germany.
The Knife for Life™ guarantee provides a lifetime warranty against material and manufacturing defects.

Molybdenum gives this blade a super fine edge ability, these are thinner than their German counterparts and stay super sharp. The GM series is a great value and holds a fantastic edge. This stainless allows for a thin and stiff blade that is easy to care for.
This is a great entry level knife which holds a sharp edge. The molybdenum makes the blade hard and has a fine grain.
